Jason Palmero

Meet Jason Palmero, the newest addition to the amazing team that make up our Novotel Rockford Darling Harbour family. Jason is our new Executive Chef, bringing with him many years of experience and knowledge in the food industry into our kitchen.  

  • Tell us a little about yourself and what you do at NSRDH

Hi I’m Jason the new Executive Chef at the Novotel Sydney Rockford Darling Harbour. I’ve always been passionate about food since a young age. I lived in a farm with my grandfather which was also a chef (very old school) and started my training when I was 14 years old. I have an extensive international experience as a chef with some of world’s award winning hotels, restaurants and conferencing centres, and had a chance to represent Australia in the IACC Chef of the Year.

  •  What do you like the most about NSRDH or your favourite things about the hotel?

One thing I really like is their vision. I was lucky enough to be chosen to be in a team that have great goals.

  •  Favourite food?

French Food but I do like to explore different traditional food. I love to combine flavours, textures & techniques.

  • Favourite things to do on your day off?

Going to the beach, dining out with family and friends, cooking with my kids, watching my son’s soccer matches, and cleaning my aquarium.

  • If you could have one super power what would it be?

To hear what people are thinking in their mind!
