To ensure complete transparency, our menus clearly display the exact origin of all seafood (Australian, imported, or mixed) along with the estimated carbon footprint of each dish. We guarantee a diverse range of choices, with at least 25% of our menu dedicated to plant-forward ingredients, legumes, and vegetables. Behind the scenes, our culinary team undergoes regular training in ocean awareness and seafood traceability.

Novotel Sydney Darling Square has partnered with Too Good To Go, the world’s largest marketplace for surplus food. Through this initiative, we make quality, unsold surplus food from our kitchens available to consumers at a reduced price, directly preventing good food from being thrown away and mitigating the environmental impact of food waste.

We grow our own fresh produce right inside the hotel via our partnership with Greenspace. This indoor microfarm allows us to harvest microgreens moments before they are served, completely eliminating food miles (transportation emissions) for these ingredients. The Greenspace closed-loop system uses a fraction of the land and water required by traditional farming and operates entirely without pesticides or harmful chemicals.
